ABOUT
THE WINE
We
dug deep to find this rare Sparkling Wine. Specially bottled
for us, this wine was barrel fermented and aged using old
world, traditional methods. The primary and subsequent bottle
fermentations were carried out very slowly. Bottle aged at
least 5 to 10 years before disgorging it receives only a small
dosage of sweet liqueur to flesh out the texture. The 1996
brut has inviting aromas of fresh baked bread with a nutty
crust. Delicate hints of white floral and nutmeg notes arise
from the plush mousse of fine bubbles.
FOOD RECOMMENDATIONS
Full
and toasty, this richly textured sparkling wine, while perfectly
graceful on its own, will develop more with a classic pairing
of oysters, foie gras, or caviar. Select trout almandine or
roasted sea bass or even sushi for the main selection and
finish off with butterscotch ice cream or red fruit tart.
