ABOUT
THE WINE
This
Jacobs family vineyard Chardonnay was barrel fermented utilizing
natural wild yeast and aged sur lies in 100% new French Oak
for 10 months. Stirred to increase the yeast contact and add
richness to the mouth-feel, the wine completed its secondary,
malolactic fermentation in the barrel as well. Only a light
filtration before bottling was necessary to retain rounder
flavors without any bitter aftertaste. The result is a combination
of aromas and tastes that remind of sweet Meyer lemons, crème
brulée, pear compote and warm biscuits. A touch of
minerals adds to the steely but silky texture reminiscent
of classic white Burgundy.
FOOD RECOMMENDATIONS
An
elegant accompaniment to prawns or lobster or if preferred
a rich salmon grilled in a light teriyaki sauce will do well.
A truly versatile wine to be enjoyed on its own or paired
with your meal.
