ABOUT
THE WINE
The
2002 vintage on Spring Mountain high above Napa Valley was
marked with warm days and cool nights through mid September.
These ideal conditions led to more complexity and excellent
balance and ripeness in the grapes. Once harvested and after
a 4-day cold soak of the whole berries, the juice went through
fermentation naturally. Upon completion, the wine was then
placed in 100% new French oak barrels for the secondary, malolactic
fermentation to mellow the acidity.
This is a true Cabernet, full, ripe and rich without overpowering
tannins. Well balanced and food friendly, this wine is rich
in aromas and flavors of blackberry, cassis and nuances of
chocolate. A long finish guarantees age ability. This wine
is almost too good to hold, but if you have the ability, keep
for 7-10 years.
FOOD RECOMMENDATIONS
We
see roasted duck drizzled with a sauce reduction of blackberries
or other hearty red meat dishes pairing well with this wine.
Another favorite is well-aged, nutty Jarlsberg or a soft ripened
Camembert cheese to accompany this Cab.
