Not far from the quaint country wharf, Cuttings Wharf, on the San
Pablo Bay you’ll find the Jacobs Chardonnay
vineyard. Since 1978 Jay and Maxine Jacobs, owners of Simon Levi,
have been tending their cool climate grapes in the renowned Carneros
appellation
of southern Napa. Influenced by the Pacific Ocean breeze and fog,
their vineyard enjoys a cool microclimate, which encourages a longer
growing season for the grapes. This means greater overall maturation
and full ripe flavors in its Chardonnay.
Carefully monitored by winemaker, Rebecca Martinsen, the grapes
are harvested when optimum flavors are achieved in the vineyard.
The
Chardonnay
is barrel fermented utilizing natural wild yeasts and then barrel
aged on its lees in 100% new French oak for 10 months. Stirred to
increase yeast contact and add richness to the mouth-feel, this
wine also completes malolactic fermentation in the barrel. Only
a light filtration before bottling is preferred to retain rounder
flavors without bitter aftertastes. The wine combines aromas and
tastes of sweet Meyer-lemon infused crème brulée,
pear compote and warm biscuits. Its mineral components add to the
steely silky texture reminiscent of classic white Burgundy.
To
add to the Carneros portfolio, the Jacobs have found an equally
sumptuous Pinot
Noir from the Carneros region. This Pinot
Noir is bold in character exhibiting mineral and earthy
complexity typical of wines derived from the thin clay soils. Its
royal purple color & texture are obtained from extended skin
contact during a cold soak prior to fermentation. Balanced acidity
leads to a long black cherry finish with a hint of cloves and allspice.
